Food on the move brings fine-dining restaurant experience to passengers

Tuesday, January 3rd, 2012

Passenger expectations are pushing travel catering to new heights and the latest innovations and creative thinking will be on display during World Travel Catering & Onboard Services Expo in Hamburg, Germany from 27-29 March 2012. Leading industry players including LSG Sky Chefs, Gate Gourmet and Servair are exhibiting along with more than 150 other catering and onboard service specialists.

Cruise dining has led the way in bringing famous chefs to enhance cruise passengers’ dining experience in the last few years but now train operators, such as Eurostar, have been upping their game by bringing in Michelin-starred expertise. Eurostar’s Business Premier class now boasts menus developed in conjunction with Alain Roux, chef patron at the three Michelin-starred Waterside Inn in England. The gourmet menus include fine ingredients sourced locally from the UK, France and Belgium.

Also picking up on the trend for locally sourced products, KLM Royal Dutch Airlines recently announced it has linked up with Michelin-starred Flemish chef Peter Goossens to develop three menus for business class passengers. Until September this year the menus, inspired by typical Flemish products but with an international twist, will be available on intercontinental flights from Amsterdam. Accompanying wines have also been selected by Goossens’s Hof van Cleve restaurant sommelier.

Meanwhile Etihad has invested significantly in its first class food offering over the last few months. It has hired more than 100 first class, classically trained international chefs to offer a dedicated food service in the airline’s Diamond First Class cabins. The chefs will also help to development menus used in Etihad’s airport lounges and across other flights. Chefs have an array of prime cuts of meat, sauces, par-cooked items, spices and freshly chopped vegetables at their disposal to allow them to prepare personalised dishes for first class passengers. The first class menu has also been redesigned and is now called The Mezoon Grille.

But will the upper end dining experience prove resilient in the face of the current financial challenges around the world? “Despite the many crises we have witnessed in the industry, the appeal of the upper-end dining experience has not waned. While the demand for it may weaken at times, fine dining remains an important differentiator for airlines and a great incentive to attract passengers,” said Josefine Corsten, Senior Vice President of Corporate Communications & Marketing at LSG Sky Chefs.

Servair takes a similar view. The company’s Chairman and CEO, Patrick Alexandre, said: “We believe that the quality of food is one of the key added values for an airline in establishing its differentiation from its competitors. Quality food does not necessarily have to be synonymous with expensive. It is also produced through the imagination and creativity of the chefs who know how to offer just the right food to the passengers.”

Back in the cruise world, are operators looking to attract passengers by offering the ability to pre-book dining packages before a voyage so that customers can plan more effectively at a time when purse strings are stretched? Royal Caribbean International has recently announced a number of dining packages for passengers across a variety of the restaurants onboard its ocean liners. With a range of prices on offer these allow customer to save money on booking packages, compared to the sum of individual restaurant cover charges.

John Hyde, the event’s Exhibition Director, said: “The industry is continuing to aspire to provide more passengers with a top level restaurant experience during their flight, cruise or train journey. It’s a testament to the dedication and ingenuity of both operators and suppliers that they manage to do this within the confines of everything from airline galleys to the logistics challenges posed by ensuring that the food served is as fresh as possible.”

World Travel Catering & Onboard Services Expo is co-located with Aircraft Interiors Expo, the global exhibition that attracts senior buyers from over 200 of the world’s airlines. The event is now 95% sold with just under three months to go.

BHA and Reed Exhibitions enter into an exclusive agreement to support Helitech

Friday, June 17th, 2011

- BHA to chair guest forum at the Helitech Conference -

The British Helicopter Association (BHA) and Reed Exhibitions have signed a two-year deal for BHA exclusively to support Helitech, which takes place this year at the Imperial War Museum at Duxford, near Cambridge, from 27 to 29 September.

As part of the agreement the BHA will be chairing a guest forum during Helitech’s conference programme.

BHA Chief Executive, Peter Norton, said: “We recognise that Helitech has been supporting the European rotary wing sector for the last 25 years so we’re delighted to be cementing our relationship further with the Helitech team by endorsing its offering to all our members. It’s an important time in the rotary wing industry with several new regulations coming on board so it’s very valuable for us to have the opportunity to speak during this year’s conference to spread awareness of this.”

Helitech Exhibition Manager, Brandon Ward, said: “The BHA has been a staunch supporter of Helitech over the last quarter of a century – but a more formal agreement means that our relationship will allow both parties to benefit from our contacts and expertise in the industry. The agreement will also allow the BHA further resources to continue the great work that it currently does on behalf of its members and the industry. I am very happy that the BHA and its members recognise the value Helitech continues to deliver to the industry, and I am very excited about the new conference programme that the BHA are involved in.

The BHA guest forum takes place as part of the Helitech Conference on the morning of 29 September, kicking off with an introduction from Peter Norton, CEO of the BHA. The European Helicopter Association’s Chairman, Dr Vittorio Morassi, will give a European perspective on the issues and challenges currently facing the industry while one of EASA’s helicopter specialists, Bas van-der-Weide will discuss the latest implications of European helicopter safety regulations.

Aircraft Interiors Expo Organiser Acquires ITCA European Tradeshow

Friday, June 10th, 2011

The organiser of Aircraft Interiors Expo has acquired Europe’s largest travel catering exhibition from ITCA – the International Travel Catering Association.  The ITCA event will be renamed World Travel Catering Expo and will take place in Hamburg from 27-29 March 2012, co-locating with Reed Exhibitions’ highly successful Aircraft Interiors Expo that already attracts senior buyers from over 200 of the world’s major airlines.

The re-branded event, World Travel Catering Expo, will address the needs of food, beverage and amenity buyers across not just the airlines but also rail and leisure sea travel operators.

Justin Tadman, Divisional Managing Director at Reed Exhibitions, said: “Reed Exhibitions has gained a reputation for its expertise in delivering successful events across many fields – including travel and the food industry – so we are looking forward to working with ITCA exhibitors and visitors to further enhance this event.

“Acquiring the event from ITCA is strategically important and enables us to provide the travel catering industry with a quality event dedicated to their sector. World Travel Catering Expo will focus on the needs of travel passengers’ in terms of comfort, menu and amenities.”

Stephen White, President of ITCA, added: “ITCA is continuing to listen to its members and it makes absolute sense to co-locate the biggest European onboard service sector event with the world’s largest dedicated cabin interiors exhibition.  Our Dubai ITCA event, as well as our other member services, will continue as normal.”

Food on the move is a complex but flourishing arena. The airline sector, for example, employs a wide variety of catering strategies to differentiate airline brands. And with the expectations of many travellers, from budget airlines right up to VVIP passengers, on the increase this is an excellent time to be addressing a market that is actively seeking out innovation. According to ITCA, the market is currently worth $15bn and growing at about 5 per cent each year.

Aircraft Interiors Expo: reaching new heights in the cabin interior

Thursday, April 14th, 2011

This year’s Aircraft Interiors Expo proved to be a busy show for the more than 500 exhibiting companies that showcased a wide variety of innovations and new products to entice airline buyers. More than 7,900 (*pre-ABC Audit figure) visitors attended the event.

Once again new seating concepts, across all parts of the cabin interior, and the latest in inflight entertainment and connectivity drew a significant amount of visitor attention but other areas such as new galley concepts, fabrics and flooring also got a look in.

Some of the highlights and announcements – from the luxurious to the practical or downright quirky – included:

• AIM Aviation displayed the world’s first flying duty free shop which Korean Air will be using on its first 10 A380s when they enter service in June. Up to 64 individual items can be displayed and, in the event of turbulence, each of the display bottles has a strong magnet on the bottom which can withstand a 2g loading

• Airbus unveiled its Space-Flex lavatory and galley concept which can enable A320-family operators to fit an extra three seats on their aircraft

• The IMS Company said that its RAVE seat-centric inflight entertainment system is going to be installed on five Brussels Airlines Airbus A330s in the fourth quarter of 2011

• Intelligent Avionics showed a full in-seat demonstrator of its new lightweight AURA seat-centric IFE system – the total weight of each seat-centric system comes to just 1.5kg per passenger

• B/E Aerospace was demonstrating its new lightweight seat for premium cabins. Unlike electric business-class seats, the Millennium seat is all mechanical helping to ensure that the seat is lightweight and lower cost. It is suited to business or first class narrowbody cabins but would also work well as a premium economy seat for widebody aircraft

• Better hygiene in aircraft lavatories beckons with wash basin manufacturer Schüschke demonstrating its automatic, non-touch waste bin lid

• Lufthansa Technik is now able to offer an exercise bike for installation on aircraft. Engineers at the company took an off-the-shelf product, made by Technogym, and modified it to satisfy aviation regulations. It is now ready for certification

Katie Murphy, Event Director at Aircraft Interiors Expo, said: “The exhibition had a great buzz to it this year and we felt that, after the economic challenges faced by the industry in the last couple of years, companies have more freedom once again to invest in research and development.”

The next Aircraft Interiors Expo takes place from 27-29 March 2012 at the Hamburg Messe. For more information please visit www.aircraftinteriorsexpo.com

Aircraft Interiors Expo: Balancing demands for comfort and safety with lighter weight cabin products

Friday, March 25th, 2011

Airline seat specialist Recaro will be presenting one of its lightest economy class seat products yet during Aircraft Interiors Expo, which takes place next month in Hamburg. The company’s engineering team says it has significantly reduced the weight of each Basic Line 3520 seat unit to less than 11kg, making it about 30 per cent lighter than the previous model; this weight reduction has been achieved through a combination of the use of high-tech materials and intelligent design. The seat also creates more living space for passengers as the literature rack is positioned above the tray table instead of in the knee area. This gives passengers more comfort even when the seat pitch is reduced.

Responding to requests for ‘softer’ surfaces around passengers during flights – particularly next to flat beds in first and business class, MGR Foamtex will be displaying a new, patented, soft trim panel. Cathay Pacific’s new business class product, which starts being installed across the airline’s long-haul A330-300 and Boeing 777-300ER fleets this month, uses MGR SoftWall to line the headboard and also to cover the bed extension. Developed in partnership with Zotefoams, MGR SoftWall meets the cabin interior’s stringent flammability requirements and uses high performance foam that is three times lighter than silicone-based alternatives. It is also hypo-allergenic and its sound-deadening properties make it ideal for crew rest areas too.

There is a whole science behind airline seating. What affects passengers’ comfort levels? Is it the height of the seat cushion, its firmness or the sense of space around a seat that influences passenger perceptions of comfort? A great deal of research goes into finding out just what makes an airline seat comfortable. Leading aviation seat cushion supplier Franklin Products conducted some research into the ergonomics of airline seats during last year’s Aircraft Interiors Expo. The company will be sharing the full findings of this report with customers and VIP visitors during this year’s show. Three different seat cushions – of increasing levels of firmness – were tested at a variety of seat heights. The softest cushion was placed at the top height and the firmest at the lowest. While the overall response was positive to all the different settings, the softest cushion gained the most approval and the top seat height, although not dramatically different from the other two, was felt to provide the best thigh support and comfort.

Another seat cushion specialist Aerofoam Industries is making its debut at Aircraft Interiors Expo this year where it will be introducing a line of innovative, lightweight, high performance foams for aircraft seat cushions. Development of the foams was driven by current market needs for seat cushions that would offer increased passenger comfort but also come with considerable weight reduction, thus helping to save fuel costs. The company believes its new 24kg/m3 (1.5pcf) flotation foam is the lightest flotation foam currently available that is also able to be recycled.

Aircraft Interiors Expo takes place from 5-7 April at the Hamburg Messe in Germany. The event covers the entire spectrum of the cabin interiors market and attracts airline buyers from around the world. For more information please visit www.aircraftinteriorsexpo.com

Aerial firefighting – from theory to practice

Monday, September 27th, 2010

The devastating effects of forest fires hit the headlines across Europe each year. This year Russia, Spain and Northern Portugal have suffered some of the worst incidents. In all cases each country needed to be ready to deploy firefighting teams as soon as the emergency calls came in.  Preparing for this requires national, legal and industry participation to set up response teams. Navigating from contract tendering through to operations is one of four key sessions being discussed at the Helitech Conference, which takes place at Airport Cascais in Portugal on 5th and 6th October during the three-day exhibition.

This session takes place at 13.30pm on Wednesday 6th with Duncan Trapp, Communications Sub-Group Leader for the European Helicopter Safety Team (EHEST), opening the discussion with a focus on lessons that have been learned within the tendering process and how to ensure these are effectively communicated to the wider helicopter community.

Also taking to the floor will be Carlos Santos, from Empresa de Meios Aéreos (EMA); Mr Santos will be talking about how EMA works for Portugal’s Ministry of Interior to provide firefighting capabilities for the nation. Mr Santos’ presentation will offer a valuable insight into handling the aerial firefighting contract tendering process from the initial development phase through to the execution of the contract covering technical, legal, commercial, cost-efficiency and safety aspects.

The Portuguese National Authority for Civil Protection (ANPC) will also be participating in the conference session.  The ANPC plays a primary role in the planning, coordination and implementation of Portugal’s Civil Protection policy. Its remit includes areas such as forecasting and risk management, emergency planning, protection and rescue as well as firefighting services. Luis Neto, from ANPC, will give an overview of all the aerial firefighting processes used by the organisation including the deployment of air support in firefighting operations.

Rounding up the session, Juan Cumplido from INEAR will discuss regulation, training and how to look for the best helicopter for a firefighting role, while José Pereira from Helibravo will talk about the tendering process from an operator’s perspective. Delegates will then be able to watch an aerial firefighting demonstration, organised by Helibravo, outside the exhibition hall on the airport’s runway.

Helibravo will field two AS350s – a B3 and a B2 version – to help extinguish the fire while the ANPC is providing a team of 10 fully trained firemen to work on board the helicopters demonstrating, in as authentic a way as possible, how they work together to put out dangerous forest fires. Two fire brigade teams will also be working on the ground.

“The ability to fight forest fires quickly and comprehensively is so important for Southern European nations. We were very keen this year to be able to have the theory behind the aerial firefighting contract tendering process detailed in our conference and then to follow through with equipment on the exhibition floor and a live demonstration outside so the visitors can see all aspects of this important topic,” says Sue Bradshaw, Helitech’s Exhibition Director.

*Aerial firefighting demonstrations will take place at 16.30pm on Tuesday 5th and Wednesday 6th October.

Helitech conference to discuss developing rotary wing technologies for cleaner skies

Thursday, September 9th, 2010

Aviation has become an essential element in today’s global society and our reliance on it is set to increase as economies grow and businesses expand beyond their national borders; however its expansion will inevitably lead to an increase in noise and air pollution and the industry is conscious that this needs to be tackled.  At Helitech Portugal’s conference, Sebastien Dubois, Project Officer at the Clean Sky Joint Undertaking, will be addressing the issue of how technological developments and design can reduce the negative impact that aircraft, with a particular focus on helicopters, have on our environment.

The Clean Sky programme is working to develop groundbreaking technologies that will reduce the environmental impact of all aircraft with the aim of bringing these technologies to market at an accelerated pace. As a Joint Technology Initiative, set up by the European Commission for funding research on ambitious and complex activities, these technologies have the opportunity to be developed and tested at a much faster pace than is normally possible, thanks to a mixture of public and private investment both in terms of human resources and financial support.

Mr Dubois’s session will cover how the Clean Sky programme will directly affect the rotary wing industry by detailing The Green Rotorcraft Integrated Technology Demonstrator (ITD). One of six key demonstrators that has been created to test and validate the technologies being developed via the Clean Sky programme, the Green Rotorcraft Demonstrator aims to minimise the impact of the foreseen increase in rotorcraft traffic through more efficient use of energy, materials and the reduction of emissions and other pollutants.

Taking 2000 as the baseline year, the Green Rotorcraft ITD hopes to reduce CO2 emissions by between 26-40% and nitrogen oxide by 53-65% per flight by 2020. Halving helicopter’s noise impact by reducing the footprint area of potential noise pollution by 50% is also on the cards.

This is in line with the goals set out by ACARE (the Advisory Council for Aeronautics Research in Europe) – the European technology platform for aeronautics and air transport.  Across general aviation these goals include reducing CO2 emissions by 50% through drastic reduction of fuel consumption; nitrogen oxide emissions by 80% and external noise by 50% - all by 2020.

“The public is very demanding regarding environmental impacts of the air transport industry, especially when aircraft numbers are likely to double by 2020. Clean Sky aims at defining solutions combining both European citizens’ expectations and the competiveness of the aerospace industry in Europe,” says Sebastien Dubois.  “Project Clean Sky gives us the freedom to encourage and pull through technologies that may have taken years to be developed.”

Sebastien Dubois will present a session on Project Clean Sky – a Joint Technology Initiative on Wednesday 6th October from 10.00 am to 10.30am.
